What are gel pastilles?

A pastille is a piece of gel, typically 1.5–3 g, formed in a mould and dried to a soft chew. Pectin and modified starch systems let us build a vegetarian product with a clean bite, and the shape can be a classic disc, square, heart or a custom mould.
